230F sounds hot to me. I’d guess it’s around 180 if Cuervo’s kit shuts the fan off at that temp. If the thermostat opened at 230, the fan would run all the time

Cuervo's early-on fan thermostat/sensor(inline sensor added into the upper radiator hose) turns the fan on at 200°f vs stock's 225°f
(yes, this is the fan, not the actual thermostat)
All modern f.i engines run lean and hot for emissions.
The 700 doesn't even get full power until it reaches 170° or 180°f
