I've got the 15T sprocket and am ready to install it. It looks bigger than I expected. Will it fit under the chain guard without rubbing?

I would rather not modify the chain guard.

If I change the rear sprocket instead, would a 14/36 be the best combination? My sand tires are 20x10x10 8-paddle Skat-Trak Edge's and I weigh about 210.

This has been covered... Yes it will fit.

If you don't have any mods then you should stick with stock gearing.

YES, like Pile said, it will fit.
NO, I would not go down to a 36 in the rear....I have yet to see a 36 fit without the chain rolling on the sprocket hub.
