It can be done in a weekend, but pay close attention to the routing of the wiring harness and it's offshoots, that can be a real pain to get back into place. Proper labeling and sorting of the bolts will be even more important, I always seem to end up missing some.
I would start with removing all the plastics, then swap the suspension components and wheels, then remove the engine and install that into the new frame and then do the wiring last..............
