It depends on what kind of riding you do, and how built your machine is. Normally, for drag racers, you want more paddle...for hill shooters, less paddle. The higher paddle count tires give you more traction from a dig, so good for hard fast launches... but they will slow you down on the top end. A lower paddle count will spin more off of the line, but won't slow you down so much once you get moving (less drag).
For a setup like yours, a set of 22" 7 or 8 paddle haulers will be ideal for all types of riding. No need for something crazy like 10 or 12 paddles, not enough power to justify them. The 7's or 8's will get you out of the hole plenty fast, and won't drag you down on the top end.
