You might be confusing the pilot jet with the pilot screw.
There are different pilot jets available but most don't need changing.
The idle screw will adjust the air/fuel at idle and just off idle.
There is also a idle screw to increase or decrease the RPMs.

So it sat for a few days and cranked right up. Didn’t run it for a couple more days and it fired right up which is great but nothing changed.

Maybe unrelated but Ive noticed if I leave the petcock on ‘off’ or when the tank gets low the bike wants to idle up and go on its own. Any idea what that might be or is that normal behavior? I can tell my son to put the parking brake on or shut it off if he gets off it for any reason or if that happens when he’s riding. Seems like it would just get low on gas and sputter out.

Sounds like a restricted petcock. Most can be removed from the tank, taken apart and cleaned.
