Override is cutting gears (and somtimes the drum) so you can upshift at WOT without using the clutch. I don't know what gears they're using for 700 Overrides but usually they cut the first three on other bikes. You can also remove gears. A regular override does not allow for downshifting until you come to a complete stop. So called "duneable" overrides usually permit downshifting with the use of the clutch. Overrides are typically reserved for drag racers and hill shooters, but not exclusive.

I have heard that overrides usually pick up a sub 5 second bike by about 2 tenths over clutching... Learning to drive one will typically require replacement of a shift fork or two. They are expensive but really really fun to drive....
